32 during 32 | New Recipe 1

Slower Cooker Mango Chicken-

First let me say I am not a cook at all.  That is all my sister.  If I can't figure out how to make it in less then three step, in less than 30 mins or in a slow cooker I will usually not even attempt the recipe.  So this recipe that I originally found this on pinterest (which is my addiction!) was right up my alley.  You can find the recipe at Six Sister's blog here.  John went back for a second serving.  He said this is going in the rotation for sure. 

Here are just a couple of notes for what I did and what I would do next time.  I cut the whole recipe in half since I was only making enough for John and I.  I hate having leftovers, so I do this a lot.  I used frozen corn because I have irrational thinking on why I shouldn't used canned vegetables.  I added about a 1/2 cup of water to the slower to make up for the liquid that would have been in the can.  It was actually too much water I will do a little less or maybe not any next time.  I think the mango salsa would have been enough liquid for it.  I think I might save some of the mango salsa to use as a topping the next time.  I really wanted some of the fresh salsa that wasn't all cooked down on top.  This is perfect on a bed of rice also.  It is really lite and a perfect summer meal for us.

Cookin' then Scrappin'- Goulash

I have been in a lot of recipe card swaps.  I am always putting together little books of the recipes for presents.  I thought that it would be nice to start putting one together for myself of my favorite recipes. 

These are come together really easy and quick.  They are 6x6 so when I am doing swaps I can get 4 out of a 12x12 which is really nice.  You can also usually make them from your scrap bin.  I started with this recipe for Goulash that my mom always use to make for us growing up.  It is super fast to make, which is always good in this crazy busy household.
